Pear clafouti

Ingredients:
A pastry
Syrup:
80 ounces of water (40 ounces of boiling water, 40 ounces of cold water)
300gr sugar
vanilla pods
a little lemon juice and zest
6-7 small pears
Cream:
2 / 3 cup whipping cream
4 eggs
4 tablespoons flour (or cornstarch)
4Cs sugar
1 cup pear syrup
Poached Pears:
Bring water and sugar to a simmer in a saucepan large enough and heavy bottom.
Add zest and lemon juice and vanilla.
Peel the pears carefully, taking care to keep the tail. The dip in the syrup.
Bring to a boil. Bake 12-15 minutes, until pears are tender.
Then let cool in the syrup 30 minutes.
Make pre-cook the pastry shortbread in an oven heated to 175 ° C.
Topping: Mix flour or cornstarch and sugar in a bowl and whisk in the syrup gradually. Whisk eggs and cream.
Place the poached pears in shortbread pie shell and pour the cream around.
Bake about 30 minutes at 175-180 ° C.
Let cool then top with apricot jam. Chill at least 1 hour before serving.
