Coffee and chestnut cream Muffins.

That is an excellent recipe that I found in  talents hauts et cacao , I recommend that you try it, a sheer delight:

ingredients: for 6 to 8 muffins:

  • 150 g flour
  • 1/2 packet of baking powder
  • 1 pinch of salt
  • 1 pinch of baking soda (optional)
  • 50 g sugar
  • 120 ml milk
  • 2-3  tablespoons of instant coffee  (+ / - )
  • 1 egg
  • 40 g melted butter
  • 8 teaspoons of  chestnut cream

Preheat oven to 180 ° C.

Coat muffin tins with non-stick baking cases

In a bowl, mix with a fork the flour, the sugar, the yeast, the salt and the bicarbonate.

In another bowl, dissolve coffee with milk, add the egg and the melted butter. Beat slightly with a fork.

Pour the liquid mixture on dry mixture and mix with a spoon until just moistened (3-4 turns will be enough ). The dough should be crumbly.


using a spoon,  pour a little amount of the mixture in the moulds, add 1 tea spoon of chestnut cream and cover again with the mixture, to the 3/4 of the moulds. 

Bake for 15-20 minutes.

Cool on a wire rack before removing from the pan.
