Using a hand mixer, whisk the eggs with about half of the sugar until you get a pale, yellow foam. It'll take about 5-6 minutes. The consistency must be very airy. Add the vanilla extract. Set aside.
Cream the butter with the other half of sugar. Pour in the egg mixture. Add the almond powder and the flour. Mix until the batter is smooth.
Place the dough in individual pie shells previously buttered, or make the shape in the pictures.
Dock the dough with a fork.
Spread about 2 to 3 tablespoons of almond mixture in each individual mold
Bake for 5 minutes at 375°F ( 200 degres C), then lower the temperature to 350°F ( 180 degres C) for another 15 minutes.
